Easy Beef Vegetable Soup That Doesn’t Taste Easy
Sometimes my freezer food gets away from me. I label everything, try to keep track of it all, and still I find a package or two of meat that needs cooking right away. When faced with cut up beef pieces that need to be used now, I can always rely on my easy, simple crock pot beef vegetable soup. Because this recipe doesn’t have a lot of ingredients, I don’t have to run to the store; I can just dig in my pantry or even use leftovers to create a tender, flavorful soup out of my forgotten beef.
Normally, any less expensive cut of beef works very well for crock pot recipes. When I find beef in my freezer that has been there a little too long, I know that the crock pot is the best way to cook it. It’s such a relief not to have to throw out food just because I’ve misplaced it for awhile. This recipe is one of those “budget savers” where you’ll really feel like you got your money’s worth out of your meal. A simple, filling meal that the whole family can appreciate.
