Don’t let those browning bananas go to waste. If you’re not in the mood to make a loaf of bread, you can mash those lovely little bananas up and use them in delicious and nutritious Whole Wheat Banana Pancakes. You can sweeten them up a little by covering a stack with some applesauce. We even like to cut up a good banana, lay the slices between the pancakes, pouring honey over each layer. Now that’s sweet and yummy! The bananas themselves give the pancakes a nice, rich moistness, and the flavor is always welcome.

If I keep a couple cheap fruit recipes handy, I know I’ll be able to use up just about any fruit that I’ve let get a little too ripe for my family’s taste. Of course, everyone has their own idea of what’s too ripe and what’s just ripe enough to be good. In most cases, you’ll know when to use a banana in cooking instead of for eating. They’re usually brown and speckled… and they smell very strong, almost like you’re smelling a “banana extract” instead of the fruit itself. Then you’ll know… it’s time to cook!
